The primary classification of cardamom for export is based on its size, color, and regional origin. We ensure that our cardamom is meticulously sorted and processed to meet international standards.
1. Green Cardamom (Small Cardamom)
This is the most common and valuable type of cardamom exported from India. It is a premium spice prized for its intense aroma and flavor. Our green cardamom is sourced primarily from the Western Ghats region of South India, particularly from Kerala, which is known as the “Cardamom Hills.”
Our green cardamom is graded based on the size of the pods, which is measured in millimeters (mm). Larger pods are generally considered to be of higher quality and command a premium price due to their higher essential oil content.
- Alleppey Green Extra Bold (AGEB): This is our top-tier grade, featuring the largest, most mature, and perfectly green pods, typically with a diameter of 8mm and above. AGEB is known for its exceptional aroma and visual appeal, making it a favorite for high-end culinary applications and the perfume industry.
- Alleppey Green Bold (AGB): This grade consists of bold pods with a diameter of 7mm and above. It offers a strong aroma and flavor, making it a versatile and popular choice for both culinary and industrial use.
- Alleppey Green Superior (AGS): This grade includes smaller pods, typically with a diameter of 6mm and above. While smaller, it still retains a strong flavor and aroma, and is a cost-effective option for applications like spice blends and flavoring.
- Alleppey Green Small (AGS-1): This grade is for pods with a diameter of 5.5mm and above.
We also offer cardamom in other grades, such as Split/Open cardamom (used for oil extraction) and Cardamom Seeds (used when only the flavor is needed without the pod husk).
2. Black Cardamom (Large Cardamom)
Black cardamom, or “Badi Elaichi,” is a different species from green cardamom and is known for its distinct smoky and camphor-like flavor. It is primarily used in savory dishes, particularly in North Indian cuisine and as a key ingredient in garam masala. Our black cardamom is sourced from the eastern Himalayas, particularly from regions like Sikkim.
3. Specialty and Certified Cardamom
In addition to our standard grades, we also offer specialized products to cater to specific market demands.
- Organic Cardamom: We supply organic green cardamom, sourced from farms that adhere to strict organic farming practices. This product is certified by recognized international bodies, making it ideal for the growing health-conscious and organic food markets.
- Steam-Sterilized Cardamom: For markets with very strict microbiological standards, we offer steam-sterilized cardamom. This process effectively reduces microbial load while preserving the spice’s natural aroma, flavor, and color.
